Bonsai Vegetables Day Dwarf peppers, miniature cauliflowers, and lithiputian courgettes are taking patios and window boxes, writes Michael LeapmanImprint Find your markers in your section, under my profile Until now, the conventional advice on vegetable cultivation in confined spaces has been that it is hardly worthwhile. Why go to all that trouble for a single family serving potatoes or the most spicy salad? It is better to fill your bathtub, window or small border with geraniums looking, and buy your greens at the supermarket. Two events have changed that. The first was the introduction of crates with compost tip that can be placed almost anywhere, in a backyard or even on a sunny balcony, and obtain decent products with just any effort except regular irrigation. The second has become evident in recent years for anyone who cruises the corridors of the supermarket: the proliferation of bonsai vegetables, perfectly formed and price outrageous, based on the questionable notion that small is succulent. Now seed merchants have begun to pack up ranges of mini-vegetables or "patio" products, selected as suitable for growing in containers. And in the huge Hampton Court Flower Show of the Royal Horticultural Society (the last day is today) Gardening What? The magazine has dedicated much of its stand to a demonstration of how to exchange vegetables in beds and turf tubs, making the maximum use of every square inch of soil or compost. The central piece of the magazine's stand is the "unbreakable vegetable plot", in which an extraordinary variety of vegetables is raised in an 8-foot bed for 3 feet, the size of an average desk. The bed has even been given the enhancements of a desk, with Tumbler tomatoes - the variety developed to grow in cutting baskets - spilling drawers on its edge. "Many of our readers grow mainly flowers and shrubs, but they still like the idea of cultivating vegetables, although they don't want a large plot of family size," says Brian Grout, research director of the magazine. "We're saying they don't need to give a big space to vegetables but they can still grow enough to enjoy. The philosophy is that you lie down in things and keep it small, and as soon as you get something out you replace it with something else. "In other words, if you want to grow mini-veggies, you just need mini-space to do it. If, for example, 3in cauliflowers are planted apart instead of 2ft, they will form heads of the size of golf balls instead of soccer, and will attract admirers of dinner guests as part of a minimalist vegetable tray. Read our Read Our Even if you begin to run to the seed - as they are so likely to do so in this miniatured form as when cultivated in full size - you can use the individual stems like broccoli, cook the small outer leaves like cabbage, and vaporize the thickest ribs like the asparagus. The point is to make the maximum use of everything that arises. "Sometimes you're harvesting things when it's not very mature," says Dr. Grout. "That doesn't matter. The Courgettes only need to be as big as their small finger to be edible. If you want a lot of vegetables on your plate, it doesn't make sense to grow them small, but if you're stirring, it's suddenly different. "A benefit of picking them up is that they don't have to get far to the line to be a success, adds Dr. Grout. For this reason, it means that you can harvest your courgettes, for example, before the omnipresent mosaic virus has the opportunity to drop them, as it does with regularity sickens my assignment. The disadvantage is that some vegetables, if they are not allowed to reach maturity, have not developed much taste. The Hampton Court exhibition is the result of two years of experiments by Joe Maiden, who runs the Gardening Which? Test beds at Golden Acre Park in Leeds. Mr. Maiden, who gives gardening tips on the local radio and satellite TV, has a reputation for non-orthodox. "He will try anything," says Dr. Grout. "Even if he's not in the rule book, he'll try." One of his latest experiments has been maximizing the performance of a single tomato plant. Among the methods he tried was to pinch the growth point and grow up to four lateral branches - the reverse of the honest time technique. By nailing the main stem and training each session vertically towards an individual support, instead of training a peach tree against a wall, the performance increased by 50% and more. Mr. Maiden says, "Many of the things we do here are out. They are my own ideas based on 35 years of gardening. But the secret, as with most things, is to have good conditions of growth." The elevated desktop size beds contain 18in soil mixed with mushroom compost. Your Hampton The judicial exhibition is essentially an ongoing work, with vegetables at different stages of maturity. A vital part of the strategy is to maintain a supply of reserve vegetable seedlings in polystyrene cups or yogurt pots. So, as soon as you pull out a few marble radishes, you can replace them with an incipient lettuce, keeping the space completely used. Among the other crops that Mr. Maiden has been growing in the patch are onions, porks, beans, beetles, curly cabbage, red cabbage, red pudding and red buds. (The prevalence of red shows that it fits the current fashion to grow vegetables that are decorative and edible). Mr. Maiden even has some sweet corn - suitable for these conditions because it grows high and makes the best use of space. Three seed companies - Dobies, Suttons and Mr Fothergills - market ranges between 10 and a dozen mini-vegetable seeds. The Dobies catalogue includes a list of recommended spacing between plants: mostly half inch (leeks and carrots) to 6in (kale), but more for the marrows and courgettes. The leukons grown in such tuned conditions will never grow big enough for the stews, but can be thrown in summer and eaten raw in salads like spring onions. This year Unwins introduced 10 "vegettable sites" chosen to grow in containers, mainly in a compact way. According to David Jeffery, the firm's plant seed manager, the answer has been better than expected. The table on this page lists varieties in order of popularity, based on the number of packages sold. Cucumbers were the surprising favorite, possibly because, like sweet corn, make efficient use of space. But it does not need to restrict itself to specially marketed varieties by deciding what to grow in pots. Almost anything that can be cultivated on the soil will do well in a properly watered and fertilized farming medium: a standard crop bag or a multi-purpose compost is fine if you do not have environmental objection to using peat; a coconut fiber compost or loin-based is what you should use if you do. In a recent visit to the RHS demonstration garden in Wisley, Surrey, I saw many vegetables thriving in containers, including the rise of French beans, garlic, pens, cilantro, parsley, seakale, rhubarb and potatoes. Some gardeners like to plant one or two potatoes in a bucket in autumn, to get new potatoes for Christmas lunch. Traditionalists will consider all these trends as nothing but fashion. Credit holders who pride themselves on producing large amounts of basic vegetables for their families will not easily become the cause of finger-sized bolts in a window or mix red lettuce with lizzies occupied on the flower frontier. I guess it will be a long time before the local flowers show introduces classes for the smallest puerro as well as the largest, but perhaps a class for the best vegetable pack is not far.8 The Hampton Court Flower The show is open today from 10 to 5.30 p.m. Trains to Hampton Court run every half hour from Waterloo. Unwins of Histon, Cambridge (01223 236236), sold nearly 200,000 parcels of her patio vegetable seeds this season. Here are the varieties in the range, in order of popularity.
